Tuna and Tomato Paste Quick Pantry Meal
I love this dish for nights where I have nothing fresh in the fridge. It’s also perfect for camping (see Cooking for Bears). So simple. So comforting, healthy and yummy. It’s also guaranteed rooster-friendly. (In fact, I got the original idea from a former guy roomie who used to make this all the time.) Once you try it, you’ll want to always have tins of tomato paste and tuna on hand (stock up when they’re on sale.) I can easily eat this dish once a week and the FC often requests it.
Ingredients
2 tins tomato paste (sometimes I like the flavoured ones, like garlic or Italian spice)
2 tins chunk light tuna (drained)
1 cup chopped onion or leek ( I love leek)
1/2 cup frozen peas (optional)
Directions
Sautee leek or onion until soft and carmelized. Add tuna, tomato paste, peas, and heat through. Sometimes I sex it up a bit by adding half a canned chipotle pepper for a smokey flavour and a sprinkle of fresh chopped coriander on top — it’s my Mexican version. I serve with rice, pasta or couscous. No cheese necessary. Serves two with leftovers for your rooster’s lunch the next day.
